Junipero starts with a base of grain neutral spirits and filtered San Francisco water sourced from the Hetch Hetchy, a watershed where fresh snowmelt from the Sierras is gathered and is known for being among the purest drinking water in the world. Then 12 botanicals, in their natural state, are ground and added straight into the distillate that is then distilled in small batches in a copper pot still. Over 25 Years later, Junipero continues to be distilled as small batches in a copper pot still. The spirit is left unfiltered and bottled at a higher 98.6 Proof creating the beautiful and unique profile of gin that perfectly stands up in cocktails and that can be only Junipero.
